A Very Dark Chocolate Mousse with a touch of Black Garlic

Prep Time: 30 minutes

Total Prep Time: 30 minutes

Ingredients:

5 oz (150 g) dark chocolate (70% cocoa), finely chopped

2 Black Garlic Cloves, pureed into a smooth paste

3 large eggs, separated

3 tbsp (40g) sugar

3/4 cup + 2 tbsp (200 ml) heavy cream, cold

Pinch of sea salt

Optional garnish: shaved chocolate, flaky sea salt, or a few drops of aged balsamic

Instructions:

  1. Place the chopped dark chocolate in a heatproof bowl. Set over a pot of simmering water (bain-marie) and gently melt, stirring until smooth. Remove from the heat and let it cool slightly.

  2. Stir the black garlic paste into the warm chocolate until it's fully mixed. Set aside.

  3. In a separate bowl, whisk the egg yolks with half of the sugar until pale and creamy. Fold this mixture into the chocolate black garlic base.

  4. Using a clean bowl and whisk, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar, beating until glossy, stiff peaks form.

  5. In a different bowl, whip the cold cream until soft peaks form.

  6. Gently fold the whipped cream into the chocolate mixture. Then, fold in the whipped egg whites in two parts, being careful to keep the mousse light and airy.

  7. Spoon the mousse into serving glasses or ramekins. Refrigerate for at least 2 hours, or until set.

  8. Garnish with chocolate shavings, a sprinkle of flaky sea salt, or a delicate drizzle of balsamic for an elegant finishing touch.
